
Swallow's nest in bouillon
The famous Chinese soup from Swallow’s nests is worth up to $ 10 thousand. Today this exotic dish serves in the best restaurants in Paris, London, New York and Moscow.
It was invented in ancient China. According to ancient legend, it has prepared for the first time in the XIII century by the young emperor of Jin dynasty. During the invasion of the armies of Genghis Khan to China the imperial army lost the war and was displaced to a rocky island. There was no food, except the bird nests of which the emperor prepared the soup. The army was saved from starvation, military spirit was well raised and the Chinese fought bravely, but the forces were unequal. Despaired, young emperor jumped from a rock in the sea.

Despite the sad end of this legend, the soup of swallow’s nests is still very popular in China and the people ascribe to it many unique properties. It restores strength after sickness, rejuvenates and increases men’s power.
This soup cooks long, but simple: swallow’s nests (and in fact these are the nests of modern siskin) get sodden several hours in boiling water. When the nest becomes softer, they take it by tweezers, gently remove the fluff and dirt, then water by alkaline solution and washed with cold water.
Nests are served in Chicken broth, with spices and rice vodka. The appearance of this dish is a transparent yellowish broth without fat shine.
